I just wanted to write a quick post about a gluten free, chickpea (garbanzo bean) free all purpose flour I made recently. I was baking a dutch apple pie for a loved one’s birthday (yes pie not cake) and it needed to be gluten free for allergy purposes. Well, I have another family member who has a chickpea allergy and if you make gluten free recipes you know that chickpea flour is usually used (especially in all purpose flour). I thought this recipe might be helpful since both gluten and chickpea allergies are common.
Recipe: Makes 6 1/2 cups
1 1/2 Cups Sorgham Flour
1 1/2 Cups Millet Flour
2 1/4 Cups Brown Rice Flour
2 1/4 Cups Potato Flour
Mix all ingredients in a large (very large) bowl.
Store in container and label.
Use in recipes that call for all purpose flour.
